On the Menu in Apt 610 this week…

Pork with Asparagus and Mashed Cauliflower & Taco Pasta

Up first: Pork!

I’m not one for the meats, but we’ve been eating lotsa pasta in this house recently so I figured I should mix it up with some meaty goodness…I also attempted to be a sneaky chef and substitute mashed cauliflower for mashed potatoes…for this I was unsuccessful… good, but no mashed potatoes.

First up, Cauliflower:

Step 1: Steam and cook the Cauliflower

Step 2: Churn churn churn

Step 3: Add butter, sea salt, and chives

Next up: Pork time.

Step 1: Start cookin the lil meaties on the stove top

Step 2: Add apple cider, apple cider vinegar, and thyme to the pan

Step 3: Move pan into the oven cook for 20 minutos at 375

Step 4: Remove porkies and return sauce to the stove top, simmer for 7 minutes

Step 5: During the last minute, add 1 tbsp of maple syrup

Asparagus:

Step 1: Easy peezy, snap off the ends, marinade in olive oil and Parmesan cheese

Step 2: Steam cook on stove top.

Taco Pasta:

At first, the hubs wasn’t too excited to be mixing italian and mexican dishes together, but once he saw the recipe and I promised to remove all traces of beans, we were good to go:

Step 1: Cook pasta

Step 2: Brown meat

Step 3: Add together, tomato sauce, corn, diced tomatoes, and taco seasoning

Step 4: Add together with pasta

Step 5: Sprinkle broken tortilla chips and cheese on top

Step 6: Cook for 30 mins at 350 degrees

Step 6: Nom Nom Nom

We’re renaming this one “Mexican Ziti” and if I would change anything I’d prob leave off the tortilla chips and swap out ground beef for ground turkey…but other then that, adding this one to the ” awesomely good” column.
